Shepherds Pie Baked Potatoes

These Shepherd's Pie Baked Potatoes are the ultimate stuffed jacket potato! Packed with a hearty and nutritious veggie filling, this easy-to-make dish is sure to satisfy your cravings and leave you feeling full and satisfied. Perfect for a cozy dinner, these potatoes are sure to become a family favourite.

Ingredients:

  • 6 medium baking potatoes
  • 1 carrot, diced
  • 1 celery 
  • 1 onion 
  • 200ml stock 
  • 2 tbsp tomato paste 
  • 1 tsp picked fresh thyme
  • 1 tsp cumin
  • 1.5 tbsp flour 
  • 1 tbsp worcester sauce 
  • 400g cooked lentils
  • 1 tbsp butter
  • Splash of double cream
  • Salt and pepper

Method:

  1. Poke the potatoes with a fork, then rub the potatoes in oil, and season with salt and pepper. 
  2. Bake in your Air Fryer at 175°C for 50 minutes or until a knife is easily inserted into the potato. If you are short on time, then microwave the potatos for 8 minutes, followed by an 8 min bake in the air fryer at 200°C.
  3. Meanwhile, using Saute on your Instant Pot or in a frying pan, saute the diced carrot, onion and celery with a drizzle of oil. Cook until lightly golden brown.
  4. Add the cumin, tomato paste, thyme and garlic and cook for a couple of minutes before adding the flour, stock, worcester sauce and cooked lentils.
  5. Simmer for 5 minutes, then set to one side.
  6. Remove the potatoes from the air fryer, cut off the top 3rd from each.
  7. Once they are cool enough to handle, scoop out the soft potato, leaving a little around the skin - ½ cm should be enough. 
  8. Place the scopped potato in a bowl with some butter cream, salt and pepper to taste and combine. 
  9. Fill each potato with the lentil filling and top with the mash.
  10. Air Fry again for 10 minutes at 190°C, until golden brown. 
  11. Serve immediately.
